Enologist, wine specialist, wine maker. Call him as you like: if worked properly in the vine with the pruning and the harvest, he's the one who can make a great wine. Our companies have 7 wine makers, five full time and two consultants of very high profile.

To drive everyone is Dr. Alessandro Cellai, who got a diploma in oenology at the faculty of agriculture of Siena (6 years) and is graduated in Chemistry. Cellai is also the general manager of the companies. At Castellare he cooperates, in the wine cellar, with Luca Ballarin and Stephen Gori; as advisor with Dr. Maurizio Castelli who created I Sodi di San Niccolò when he was the full time wine maker of Castellare. Since four years also Dr. Christian Le Sommer follows, as advisor, the wines of Castellare. Dr. Le Sommer, after having been the wine maker of Chateau Latour, is now the wine maker of all the companies of Domain Baron De Rothschild-Lafite outside France.

At Rocca di Frassinello Cellai and Le Sommer work on the same wavelenght , in the spirit of the joint venture. With decision and confidence they wanted that the first label, le grand vin, Rocca di Frassinello, was bottled sinche the first vintage, the one of 2004. And they were right: the critics arrived to give 94/100 to Rocca di Frassinello 2004, an unprecedented rating for a first vintage. In the wine cellar of Rocca works the wine maker Massimo Casagrande who has been in the past the main cellarman of Castellare.
At Feudi del Pisciotto where the building of the cellar started on 2007, Cellai cooperates with Dr. Salvo di Maggio, a dinamic native of Palermo with very clear ideas on how the grapes of Sicily have to be treated. Di Maggio is also in charge, being an agronomist, of the vines. A synthesis which allows to repeat at Feudi the success of Rocca.
