The three crucial actions of the wine production: the pruning, the vintage, the wine cellar. Three actions that require great professionalism, therefore great professionals: the pruner, the grape harvester, the wine maker. In their way true artists that in the Domini Castellare di Castellina has been selected and are brought up with the same care and the same passion with which the painter selects the canvas, the subject, the colours.
The first two professions are in the workers DNA of the three companies, especially in Chianti and in Sicily, but also in Maremma which is a land with a more recent tradition in the production of great wines.
The sharecroppers of Chianti and the workers of the Sicilian feuds knew everything about the pruning since they were child, handing down the best technique from generation to generation, that now has been improved thanks to the studies of wine-growing of the best universities of the world: Florence, Milan and the Davis of California. The vintage has on the contrary suffered a small but deep revolution: the sharecroppers, always to the limit of poverty, aimed at quantity, therefore zero selection; in the companies of Domini Castellare, the first fundamental selection is made in the vineyard. The wine maker is a job since the beginning of the last century. For a lot of time also the best companies of the Chianti area did not have their own wine maker, but simply the suggestions of the inspectors of the Consortium. Castellare has its own wine maker from over 40 years.
