Ideal for those who prefer red wines for an aperitif. The advice, therefore, is to keep a bottle in the fridge for any occasion, especially when summer is coming.<br><br>\r\n\r\n<em>\u201cSenza lilleri non si lallera&#8221;<\/em>, which means &#8220;without money you can\u2019t do anything&#8221;, once said the Tuscan peasants. A motto that explains the origins of the ancient method of &#8220;governo&#8221; which sees the addition of a small quantity of dried grapes after the first fermentation to accelerate the maturation process of the wine. A method used since the Middle Ages that has been progressively abandoned with the advent of the long-aging Tuscan wines.<br><br>\r\n\r\n<strong>Castellare di Castellina<\/strong>, on the other hand, has never set aside this ancient and noble practice that still today adopts to produce the Governo di Castellare, a wine that smells of spring: it is not by chance that the iris appears on the label, a nice flower called giaggiolo in Tuscany.
